First I chopped a large red onion.
Then I had to choose a salad dressing to marinate the onions in...
I decided to combine all three...
I added a bit of pepper, covered the bowl with saran wrap and let it sit on the counter until supper time.
Right before serving I tossed in three roughly chopped navel oranges with the onions and dressing and ...Voila! All done!
I also made a variation that had fat free feta cheese and chopped walnuts. (Some of my family loves feta, some hate it, so with two versions there was something for everyone). They both got two thumbs up from the whole family, so we'll definitely be having more orange and onion salads this summer! Thanks, Corey!
And I love using my old thrift store glass bowls for dishes like this. I've picked up several in different sizes and styles over the years and they're perfect for serving salads and side dishes!

This sounds easy and delicious. I will have to try it this Summer. Do you think it would work with a can of those little mandarin oranges?
ReplyDeleteWhat a wonderful summertime salad! Thanks! We love the fat-free feta cheese here too.
